Did someone say soup season is upon us? I don’t know about you but I can eat soup year round. It’s hearty and it warms the soul. Today I want to share a Charleston favorite of mine She-Crab soup. It’s full of flavor and seafood and it’s a tasty treat perfect to start your fall off right. Here is the recipe and at the bottom of this post, I share some of my other soup recipes for you to enjoy this Fall/Winter.

She Crab Soup

 1/2 cups of pasteurized milk
1 pound of crab meat (I prefer the blue crabs in mine but any will do)
1/2 cup of diced celery
1 tbsp of chicken base or chicken stock is fine too
1/2 cup of heavy cream
4 tsp sherry
1/2 cup of diced onion
2 1/2 tablespoons of flour
1 stick of butter

Saute onion and celery with butter in a sauce pan
add flour and stir until think
add heavy cream and chicken base then bring to a boil stirring occasionally
add crab meat and simmer for 5 min
add milk to get the desired consistency
top with tsp of sherry

    Seems like 2 1/2 cups of flour is way too much. I’m guessing it should be tablespoons
