Skip those greasy restaurant-style dishes and go for these homemade Fried Egg Rolls instead. They’re stuffed with ground pork, a softened coleslaw mix, and just the right seasonings to really make them sing. Great as an appetizer, main meal, or just a snack.

I absolutely love me some Chinese food or Japanese food…Asian food in general. The vibrant flavors are so addicting. It always hits the right spot when I’m starving. Well, any time, really. However, I hate having to pay the price for it and make the effort to go get it after ordering. I know, sounds lazy, but after a long day, it doesn’t sound fun, right?

I do my best to make dinner as often as possible or to cook at home. These Fried Egg Rolls are one of those things. Some of my favorite meals I’ve made lately are Cream Chicken with Spinach and White Chicken Chili. Both of those along with this recipe were gold and went over well in my house. While you’re at it, make some stellar Iced Tea to go with it.

Tips and Variations:

 

  • Storage – Store in an airtight container in the fridge for up to 4 days. Freeze for up to 2 months in an airtight container.
  • Add more veggies – If you prefer some more veggies, you can go ahead and add them, but just know, they have to fit in the egg roll wrapper.
  • Make it spicy – Add some diced jalapeno or pepper flakes to the mix to give it a spicy kick.
  • Use the mixture in other ways – You don’t have to use this delicious meal for just egg rolls. You can serve it over rice noodles or rice to make it a different dish.

Yields: 12 Egg Rolls

 

Ingredients:

 

  • 12 Egg Roll Wrappers
  • 1 Pound Ground Pork
  • 3 Cups Red Coleslaw Mix
  • 3 Tablespoon Green Onions, chopped
  • 1 Tablespoon Hoisin Sauce
  • 1 Tablespoon Garlic, minced
  • 1 Tablespoon Sesame Oil
  • 1 Tablespoon Soy Sauce
  • 2 Teaspoons Ground Ginger
  • Sea Salt
  • Freshly Ground Pepper
  • Oil for Frying

 

Directions:

 

  1. In a skillet, heat the sesame oil and toss in the garlic. Saute for a minute then add in the coleslaw mix and cook for about 5 minutes. Salt and pepper the mix.
  2. Add in the ground pork, adding a bit more salt and pepper to the meat. Cook until pork is done and be sure that it’s finely chopped up. Toss in the green onions and give a stir.
  3. In a small bowl, whisk together the ginger, soy sauce, and hoisin sauce. Add to the pan and cook for a few minutes or until some of the liquid has cooked off.
  4. Place about 2 tablespoons worth of the mixture in each egg roll wrapper and fold occurring to directions. You’ll simply need a touch of water to seal them closed.
  5. Heat oil in a deep-fryer or frying pan, and once heated through, fry each egg roll for about 2.5 minutes on each side or until the entire outside is golden brown.
  6. Move to a plate to drain, serve, and enjoy!
