A lot of people don’t realize that some of their favorite burritos are already vegan. Vegan burritos are super easy to make since the ingredients commonly used are already vegan-friendly. For example, items like beans, rice, and lettuce are commonly vegan-friendly and are found in burritos all the time. So, no worries about lacking in flavor or eating strange food with this Vegan Burrito recipe. Just your usual Mexican ingredients and a super satisfying meal to follow.

 

Tips and Variations

 

  • Storage – Store the ingredients separately in airtight containers in the fridge for up to 4 days. I don’t suggest freezing any of these ingredients as they won’t come back out very nice. Do not store after placing ingredients in the tortilla as it will be very soggy and gross if you do.
  • Use the ingredients you prefer – If you love burritos, simply use the ingredients you prefer on a burrito. Just be sure that the ingredients you choose are vegan as some may surprise you.
  • Make it spicy – In order to give your burrito a kick, try and use some spicy salsa. You can also add pickled jalapenos or a hot sauce as well.
  • Keep it mild – If you prefer to keep the kick out of your burrito, simply skip the salsa or choose a very mild one.

Are Vegan Burritos Healthy?

 

As with any recipe, it will depend on what your vegan burrito includes, ingredients wise. It will also depend on what you’re looking for in a healthy diet. For example, low calorie, low carb, etc.? The ingredients used in this specific Vegan Burrito recipe are healthy choices and contain great nutrients! However, black beans can be more carby than some people prefer for their diets. In general, though, vegan burritos tend to be on the healthier side more than the unhealthy side. Just be smart about ingredient choices.

Cook Time: 5-10 Minutes

Serves: 6-12

 

Ingredients:

 

  • Large Flour Tortillas
  • Canned Seasoned Black Beans
  • Rotel
  • Spanish Rice
  • Salsa
  • Sun Dried Tomatoes
  • Vegan Sour Cream
  • Shredded Lettuce
  • Vegan Shredded Cheese (optional)

 

Directions:

 

  1. Preheat the oven to 350 degrees and spray a baking sheet with non-stick spray.
  2. Lay the tortillas out flat. Smear about 2 tablespoons worth of the vegan sour cream down the middle of the tortilla, leaving the ends clear. Sprinkle with as much vegan cheese as desired.
  3. Next, layer on the black beans, salsa, spanish rice, rotel, a sprinkle of dried tomatoes, and then finish off with some shredded lettuce.
  4. Fold the burrito and lay on the baking sheet.
  5. Bake for about 5 minutes or until the tortillas have been warmed through or lightly crisped and the cheese has melted.
  6. Cut in half and serve immediately.
