Yoda Soup – Immune Boosting

My son is the king of Meme’s I guess that’s what these young folks do these days. I always ask him what the latest memes are and he is always sharing them with me. When I first saw the baby yoda one my first thought was awwwwww so cute! Then I remembered that I had a recipe that I wanted to share so that you can boost your immune system this winter. Introducing the yoda soup or what I call the immune boosting soup.

Ingredients:

Serves 1

 

  • 1 ½ Cups Fresh Spinach
  • 2 Tablespoons Lime Juice
  • 1 Tablespoon Fresh Garlic, minced
  • ½ Teaspoon Turmeric
  • ½ Teaspoon Ground Ginger
  • ½ Teaspoon Cayenne Pepper
  • ¼ Cup Almond Milk
  • ¼ Cup Chicken/Vegetable Stock
  • Salt & Pepper, to taste
  • Plain Greek Yogurt (optional)
  • Chia Seeds (optional)
  • Extra Fresh Spinach (optional)

Directions:

 

  1. Combine the spinach, spices, and lime juice in a blender. Blend until smooth.
  2. In a small saucepan, combine all the ingredients including the spinach mixture, excluding the three optional ingredients. Stir well and heat on medium until steaming.
  3. Place in a bowl and top with the optional ingredients if desired.

Because the kids always have some type of sniffles this is the perfect soup to make for winters. I made some just before the kids went back to school for the holiday break. They don’t like it but would rather drink this than medicine. May the force be with them as they go back to school from the winter break.

    Baby yoda is such a fun trend these days. When we were at the Disney store last week, my kids were trying to find Baby Yoda items. This soup looks tasty!

    I will have to give this a try. I love a good soup, especially in the winter. Plus we love Baby Yoda! Even though I’m told it’s not really baby yoda, but called the child. But still.
