Being from Charleston, SC you kind of grow up eating Okra in many variations. Okra soup, Fried Okra, Okra Perloo, or just some okra sauteed with your favorite seasonings. Okra is slimy and it’s an acquired taste. My kids hate it but I love it and will forever eat Okra…if I can find it. It’s a hard staple to find here in Atlanta, GA most of the time I gotta get it at the Farmers Market or get it frozen. There are many benefits of Okra such as helping with diabetes (which I have pre-diabetes), it helps fight cancer, it’s good for your brain, makes your skin beautiful, etc. Here is a recipe for a crockpot gumbo for a busy weeknight dinner.
Crockpot Gumbo for a busy weeknight dinner
I made gumbo the other day in the crockpot. It was easy and its a quick dinner for a busy weeknight.
I didn’t use a lot of measurements so bear with me as I put this together. As far as meats I used sausage (hillshire farm is good or a spicy sausage of your choice) shrimp, boneless chicken (I did breast).
I used all of the sausages, about a pound of shrimp (I got cooked shrimp save that shrimp until the last 10 min of cooking) and a pack of boneless chicken breast. The pack at 3 in it.
I cut the sausage up small and used:
1 onion, diced
2 celery stalks, sliced
4 garlic cloves
2 bay leaves
A bag of frozen okra
6 ounces tomato paste
15 ounces diced tomatoes
Some cajun seasoning
1/2 tsp pepper
1/2 tsp cayenne
(I also used onion powder, salt, some paprika, and Worchester sauce. I didn’t measure those so if you add them use it how much or as little as you feel it needs)
Throw it all into a pot. Cook on low for 6-7 hours. Put the shrimp in the last 10 minutes (15 if you used reg shrimp not cooked already) You can serve it over rice or eat it with some bread (like I did lol). This is even better the next day.
