I love waffles. They have tiny little pockets to hold all my syrup. Now I am a huge fan of eggo waffles or waffle house (a southern thing) but sometimes I want to eat a little healthier go vegan once in a while. Find balance in having my cake and eating it too well in this case my waffle and eating it too. Here is my go to easy vegan waffle that I make every now and then. My son noticed immediately when I didn’t make my reg waffles and called me out on it saying that I was ruining his life but he ate it so there is that. Vegan waffle recipe

2 cups of spelt flour. I get my flour from Berlin Bakery. 

2 tablespoons of coconut sugar or pure cane sugar (I do a good heaping amount it won’t hurt anyone)

1 tablespoon of baking powder

1 ¾ cups unsweetened vanilla almond milk (if you don’t have that use unsweetened almond milk and add a cap full of Vanilla extract)

3 tablespoons of apple sauce…(I just use the whole small container that the kids eat out of) or you can make your own cause some of y’all got time lol

pinch of salt if you want

Cook your waffles how you normally cook them (I use a 1/2 measuring cup to scoop mine on the waffle maker)

Pair this with fruit and warm maple syrup with a nice glass of orange juice or water if you want to have a healthy balance.

If you want you can always make a waffle sanwhich with eggs and turkey bacon in the middle, or spread jam on it, or even cream cheese. Be bold and have your waffle how you want it.
