Watermelon Salad and Other Watermelon Recipes

Watermelon salad is a delicious way to say hello to spring and summer days. Perfectly ripened watermelon chunks are combined with fresh cucumber and rich feta. A drizzle of olive oil and lemon juice completes this refreshing salad recipe.

I can never have too much watermelon. It’s so refreshing when the weather starts to get warm again. Nothing cools you off better than a nice bowl of sliced watermelon and a glass of iced tea. That’s been a favorite combo of mine since I was little and it brings nostalgia crashing over me every time I have it. I’ve started this little tradition with my kiddos and I love seeing them enjoy it just as much as I always have.

  • What are the benefits of eating watermelon? – The best part about eating watermelon is it contains a lot of water. This means it helps keep you hydrated. Of course, watermelon also contains a ton of great nutrients our bodies need on a daily basis. So much so that it’s said it can help keep cancer, heart issues, and inflammation at bay.
  • Is it ok to eat watermelon everyday? – Although watermelon is great for health, just like anything, if eaten in excess, you could possibly see some issues pop up. Watermelon is high in potassium and lycopene. Although both of these are why watermelon is so good for us, they also can cause issues such as diarrhea if eaten in large enough quantities.
  • When should you not eat watermelon? – Really, there’s no limitations to when you should and should not eat watermelon. However, if you get a bit more detailed, it’s best to not eat watermelon right before bed. One, it has a bit of acid in it and could cause indigestion or even delay digestion since you’re lying down for long periods. Not to mention, it’s full of water and could interrupt your sleep and cause you to have to go to the bathroom.

Watermelon Salad Recipe

Prep Time: 10 Minutes

Cook Time: 0 Minutes

Serves: 1

 

Ingredients:

 

  • ½ Cup Watermelon, chopped
  • ⅓ Cup Cucumber, chopped
  • ¼ Cup Feta Cheese Crumbles
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Lemon Juice
  • Chopped Walnuts (optional)

Directions:

  1. Combine the watermelon, cucumber, and feta in a bowl.
  2. Combine the lemon juice and oil in a small dish and mix.
  3. Drizzle over the watermelon mixture and lightly toss.
  4. Top with walnuts and a sprinkle of salt if desired. Enjoy!
