I love sweet potato but not the pie version. I know, judge me all you want but I don’t like sweet potato pie. I do however like sweet potato casserole or candy yams as I call them. Something about that brown sugar, that sweet potato, and cinnamon that speaks to me. Here is my version of a sweet potato casserole below because it’s a sweet type of day to have one.
It’s a sweet potato casserole type of day
1/2 cup of light brown sugar
1/4 cup of all-purpose flour
2 cups of toasted pecans
1 cup melted butter
5 cups of mashed potatoes (cooked)
1 cup of granulated sugar (sugar in the raw works too for a healthier version)
2 eggs beaten
1/3 cup evaporated milk
a teaspoon of vanilla extract
pinch of salt
a teaspoon of ground cinnamon
1/2 teaspoon ground nutmeg
preheat oven to 350 in a small bowl combine the brown sugar, flour, pecan, and 1/2 cup of melted butter. In another bowl (stand mixer works best) bet the potatoes until light, beat in the remaining butter, sugar, eggs, milk, vanilla, salt, cinnamon, and nutmeg. Pour into a baking dish and sprinkle with the topping of pecan mixture. Bake for 35 min or until firm
You don’t have to wait for the holidays to enjoy this sweet treat it’s perfect in the Summer too at a nice backyard picnic or a sweet but healthy treat for you. Potatoes are healthy aren’t they lol. How would you make your casserole? Would you add marshmallows?
