How to add more vegetables to your diet

Does anyone truly enjoy eating vegetables? If so, most of us would consider them weirdos. But they’re good for us and we know we should be eating them, but most of us don’t. But I want you to start adding more vegetables to your diet. It’s why I’m sharing these tips for doing just that.

As healthy as they may be, vegetables often taste bad and we don’t enjoy eating them. We want healthy options that taste delicious to us and the kids; especially the kids.

The first thing you have to do is make a conscious effort to buy, stock up on, and incorporate more vegetables in your diet. That’s it. The first step in knowing better so you can do better.

How to add more vegetables to your diet

Meal Prep

Cooking in advance and meal prepping is a great way to avoid indulgences and eating on the go, which isn’t often healthy options.

Get Fresh Veggies

If you want to add more vegetables to your diet, do yourself a favor and don’t get them frozen. You’ll completely forget they’re even in your refrigerator. Getting fresh vegetables will remind you to actually use them. Why? They tend to rot easily. By also keeping them out in the open, it’s a reminder to use and cook them.

Add a Salad

Adding salads to your meals, like lunch and dinner, is a great way to remember to not only eat more vegetables but to also stick to a meal plan and program that works best for you.

But having them in stock isn’t enough to encourage us to actually eat them, right? For those of us who don’t mind stocking up but hate the taste of vegetables, here are some additional suggestions for you. From combining, mixing, and stuffing them in our favorite meals.

Combine with fruits

Most of us probably wouldn’t find it challenging to eat more fruit, much like vegetables. So how about we combine the two? Vegetables like spinach, kale, and carrots are good additions for making a tasty smoothie you and the kids will enjoy.

You can also add other vegetables such as beets, cabbage, ginger, and believe it or not pumpkin for a flavorful finish.

Snack on Them

Yeah, I know, I know. If we don’t like vegetables what makes you think we’ll want to eat them as a snack? But hear me out.

Vegetables like carrots and celery can be delicious when eaten with or dipped in yogurt. Yes, yogurt. Didn’t think of that, did you? Pick a flavor, any flavor, and start dipping. Yup, thank me later.

 

Stuff it

Another suggestion is to stuff your veggies in your favorite protein. Think stuffed chicken or stuffed salmon. Sounds delicious right?

After stir-frying and before place the meat in the oven, stuff it with vegetables. As your protein bakes, the vegetables will soak up the juices and seasoning, making for a flavorful and healthy dish.

Mix It

Similarly, to stuffing your favorite protein with vegetables, you can mix and combine it in eggs for a tasty omelet.

Think broccoli, cauliflower, mushrooms, spinach, kale, bok choy, peppers, and tomatoes.

Other alternative dishes include vegetable pasta or lasagna, shrimp, and noodles with veggies.

Roast It

There are some vegetables that simply taste better based on how they are prepared. Have you ever tried the stuff and roasted bell peppers? How about roasted squash, or Brussel sprouts or asparagus?

Delicious!

Soup It

Do you enjoy a good bowl of soup from time to time? Soups are pretty easy to cook and an easy way to dump all your not so favorite veggies. It’s easily digestible and for the kids to eat up.

With soups and broths, the flavor is again the key here. The vegetables will likely soak up the combined flavors making them more delicious.

Ingredients can include:

1 egg

1 small bag of baby spinach

1 medium zucchini

1 yellow onion (chopped)

3 large carrots (chopped)

2 tablespoon of extra virgin olive oil

Ricotta and mozzarella cheese

1 box of lasagna noodles

Minced and chopped basil and parsley for garnish
