These Apple Cinnamon Muffins are a delicious way to wake up in the morning. Bursting with tart apple flavor and the spicy addition of cinnamon, you’ll never run into a more satisfying recipe. Easy and great as an on-the-go snack too!
Let’s get real, I’m not someone to wake up and be Betty Crocker for the kids. I don’t make big elaborate breakfasts – we go through a McDonald’s drive-through for breakfast most days. However, if I’ve got time and I can make breakfast ahead of time, I’ll definitely do that here and there. Not on a consistent basis, but when I can, I do. I definitely would prefer the kids to have a better option than fast food, but that’s not always a possibility.
These Apple Cinnamon Muffins are definitely one of my go-to make-ahead breakfast recipes. They last for a couple of days and both the kids and I love them. We even use them as a snack for after school or if we don’t get time for lunch. Sometimes, we’ll have to have a late dinner and they work great as an in-between snack as well.
Apple Cinnamon Muffins
Tips:
- This is for normal size muffins, not the mini muffins. If you decide to make mini muffins, this amount should double or triple the yield of mini muffins you’ll get in one batch.
- Use any type of apple you prefer. My favorite apple is the pink lady, which is what I use in my recipe. However, any apple will do.
- You don’t have to make the muffins with the topping. If desired, skip the topping and you’ll still have a delicious muffin.
What are the Best Apples for Muffins?
This will largely depend on what type of muffins you’re making and what type of flavor you’re going for. If you want a sweeter apple taste, go with pink lady or gala apples. If you really like the tartness of apples and are shooting for caramel apple muffins, then granny smith or another type of green apple would be perfect. Any type of apple works well for muffins, but it’s up to you and your taste preferences on which would be the best.

Cook Time: 20 Minutes
Makes: 10-12 Muffins
Ingredients:
- 1 ½ Cups Flour
- 1 Cup Sugar
- 1 Egg
- 2 Apples
- ⅓ Cup Oil
- ⅓ Cup Milk
- 1 Tablespoon Cinnamon
- 2 Teaspoons Baking Powder
- 1 Teaspoon Salt
Topping:
- ¼ Cup Sugar
- 2 Tablespoons Butter, softened
- 2 Tablespoons Flour
- 1 Tablespoon Cinnamon
Directions:
- Preheat the oven to 400 degrees.
- Combine all the dry ingredients in a large bowl and mix well.
- Add the wet ingredients to another bowl and mix well – until the egg is fully beat.
- Add the wet ingredients to the bowl of dry ingredients and mix until just combined (don’t overmix).
- Peel, core, and dice apples – fold those into the batter.
- In a greased muffin tin, fill each cavity about ¾ of the way full.
- In a bowl, combine all ingredients for the topping and divide evenly between all the muffins, sprinkling and covering each muffin with the mixture.
- Bake for about 20 minutes or until a toothpick comes out clean and enjoy!
