Cookies are one of those desserts that never get old. Mainly because they can be turned into whatever flavor your heart desires. Macadamia Nut Cookies have always been one of my favorites. I remember growing up with them as a kid. Now that I’m older, I make my own to share with the kids (if there’s any left). Macadamia Nut Cookies
Tips and Variations:
- Use butter in place of shortening – If you want a thinner and crispier cookie, use butter instead of shortening. This allows the cookie to spread out more in the baking process.
- Add more nuts and chips – If you like a cookie that’s heavy with nuts and white chocolate chips, add up to a half cup more of each.
- Use other chip flavors – If you’re not a fan of white chocolate chips, you can always skip them or use a different flavor. Butterscotch chips, caramel chips, or dark chocolate chips are a few tasty examples.
- Storage – Store in an airtight container in the fridge or pantry for up to 5 days. To freeze, separate the cookies by sheets of wax paper and freeze for up to 3 months in an airtight container.

Cook Time: 8-10 Minutes
Yields: About 30 Cookies
Ingredients:
- 1 Cup Flour
- ⅔ Cup Macadamia Nuts
- ⅔ Cup White Chocolate Chips
- ⅔ Cup Sugar
- ½ Cup Shortening
- 1 Egg
- 1 Tablespoon Vanilla
- 1 Teaspoon Baking Soda
- 1 Teaspoon Salt
Directions:
- Preheat the oven to 350 degrees and cover a baking sheet with parchment paper.
- In a large bowl, cream together the egg, vanilla, butter, and sugar.
- Add the rest of the ingredients except the nuts and chips, and mix well.
- Fold in the nuts and white chocolate chips.
- Place 1 heaping tablespoon per cookie on the sheet, at least an inch apart.
- Bake for 8-10 minutes, checking at 8 minutes just in case. Cooking times will vary with each oven and climate.
- Let cool on the pan for a few minutes before consuming.
