Sometimes I like to wing it for dinner. Sometimes I like to take whatever I have in my fridge and make something up. Sometimes I want to recreate an older dish and make it new. Sometimes I don’t know what I am doing in the kitchen and boom things happen. In this case, it’s a little of all the above. I’m making cream chicken with spinach. You can totally do this with broccoli too but I had spinach leftover that I didn’t put in my smoothie so I thought I would do it what I had.
Cream Chicken with Spinach
2 tbsp of EVOO
some chicken breasts (I used 3)
paprika (I don’t have any measurements just season)
Salt (kosher but reg will do if you don’t have kosher)
Pepper (remember to season how much you want it seasoned)
Sweet yellow onion (dice it up)
Garlic (I use the one in the jar because it’s easier) I usually use a tablespoon of it.
Spinach ( I get the baby bag…it will all shrivel up anyway so it doesn’t matter which bag you get)
1 cup of heavy cream
3/4 cup of chicken broth
Mozzarella about a cup will do
half a cup of parmesan (I use the real parmesan cheese but the powder one will do)
I added some cheddar cheese because I like cheddar but that is optional
In a large skillet heat the oil. Season the chicken with your seasonings and cook until golden brown. Transfer to a plate. Heat up another big pan with some oil and add the onion then garlic (add some butter here too if you feel like it to make it richer just a dab) Let that cook down and then add the spinach until it gets smaller and smaller and smaller….
BTW don’t you hate the big bag of spinaches that just melt down so fast. Get two bags if you love spinach. Pour the heavy cream and chicken broth and let that simmer for about 3 min. Add in your mozzarella and parmesan and stir until it’s melted and then add in your chicken. Mix that sauce over that chicken good and then boom dinner is served.
It took me 30 min to create this dish so make sure you dd this to your weeknight dinner menu. You can serve this over pasta, with bread, or by itself. The kids had a french bread toasted with oil to eat with it and they were in heaven even my picky son who doesn’t eat anything ate this. If you are lactose intolerant…make sure you take your meds because I know I sure did lol. You can substitute the cheese and use lactose Vermont cheddar cheese to cut down on the dairy.
