Who doesn’t love a good pancake? I prefer to make them from scratch but time doesn’t allow me to do that often. What do I do? I make this remix of Aunt Jemima pancakes recipe.
I do love Hungry Jack pancake mixes but when it comes to this recipe Aunt Jemima is the best.
Remix of Aunt Jemima Pancakes
3/4 cup whole milk
1 egg
1 tablespoon butter, melted in the microwave
1 cup Aunt Jemima Pancake Mix
(big family? Double if you need too)
Heat griddle or skillet over medium/low until very hot.
Mix milk, egg, and butter until smooth. Add pancake mix to wet ingredients until just combined, when the large clumps have decreased but the batter is still relatively lumpy.
Season skillet with butter. Top with desired fillings. Cook pancakes when they start to bubble (as in the above photo) and reach a golden brown, a couple of minutes. Flip and cook until golden brown, about a minute.
Now many people put toppings on their pancakes or put things in their pancake. I prefer blueberries with mine if I have some on hand. If I don’t then plain pancakes will do.
This is a great make ahead meal also to put in the freezer to make on busy weekday mornings. Just pop them in the microwave or even the toaster and breakfast is ready. And because we love pancakes around here, these sweet potato pancakes remain on our go to list too.
