Mini Snickers Cheesecake

I wrote this post a long time ago on my Kokoa Magazine website and I thought I would bring it over here. The pic at the bottom is old but the recipe is still golden.

Let me first start off by saying I am not a baker but the kids and I tried this and we fell in love. I love to make things with my kids it’s a great way to spend some family time together. I hate baking because I am not a fan of measurements and I also hate that sometimes you have too many ingredients. This though is simple and tastes great. This is my version of a Mini Snickers Cheesecake

Mini Snickers Cheesecake

For the crust:
2 1/4 cups graham cracker crumbs
6 tbsp.  butter, melted
3 tbsp. sugar

For the filling:
2 lbs. cream cheese, at room temperature
1½ cups sugar
Pinch of salt
1 tsp. vanilla extract
4 large eggs, at room temperature

For the topping: I used caramel sauce and then chocolate sauce. I drizzled them over the cheesecake once cooled and then put my mini snickers on top

Preheat the oven to 325 Line cupcake pans with paper liners.  In a small bowl, combine the graham cracker crumbs, melted butter, and sugar.  Stir together with a fork until well blended and all the dry ingredients are moistened.  Press 1 tablespoon of the mixture into the bottom of each cupcake liner. Find the bottom of a cup ( I use my kid’s cups) to press down.  Bake until just set, 5 minutes then set aside to cool.

For the Cheesecake,  beat the cream cheese on medium-high speed in the bowl of an electric mixer until fluffy.  Blend in the sugar until smooth.  Mix in the salt and vanilla.  Beat in the eggs one at a time, mixing well after each addition.

To assemble, spoon 3 tablespoons of the cheesecake batter over the crust in each cupcake liner.

Bake until the filling is set, about 22 minutes, rotating the pans halfway through baking.  (They will look quite puffed initially but will return to normal quickly.)  Let it cool to room temperature then transfer to the refrigerator and let chill for at least 4 hours before serving. After they have chilled top each one with your toppings. You can use this recipe and do any toppings you like.

    These mini snickers cheesecakes sounds delicious and tempting. This is perfect for family gathering. Who would say no to cheesecakes.

    One of my teenagers saw me looking at this recipe, he said, “MOM, you gotta make that. But not mini. Big. VERY BIG!” LOL. They are bottomless pits and this looks sensational!
