Make ahead blueberry muffins for a busy morning

I am back from my vacation. How Y’all doing lol? Since I am back in the swing of things I need something easy for breakfast. One of my go-to breakfast items is make ahead blueberry muffins. I use to make them from the box but I am trying to be a bit healthier around here so I started making them from scratch. I make them the night before and then put them in my glass cake cover for the next morning. The kids get up and warm them up in the microwave for 10 seconds and drink some orange juice…BOOM breakfast is done. I get real blueberries but you can use the frozen kind also. Just be careful how you mix because it may not mix well. I use a spoon to mix the ingredients in so the blueberries stay whole (this makes a dozen)

Make Ahead Blueberry Muffins

  • 1 1/2 cups (all-purpose flour
  • 3/4 cup granulated sugar, plus 1 tablespoon for muffin tops
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1/3 – 1/2 cup milk
  • 1 1/2 teaspoons vanilla extract
  • 6 to 8 ounces fresh or frozen blueberries

Preheat oven to 400º F (Makes 12 regular size muffins) In a large bowl whisk flour, sugar, baking powder and salt. Use a measuring cup that holds at least 1 cup and add vegetable oil, egg and then fill the cup to the 1-cup line with milk (about 1/3 to a 1/2 cup of milk). Add vanilla and whisk until combined. Add milk mixture to the bowl with flour and sugar then use a fork to combine. Do not over mix. Add the blueberries and then divide the batter in the muffin cups. Sprinkle a little sugar on top of the muffin before you bake and bake at about 20 min

My Blueberry Pie Muffins are also great for busy mornings.

    I love muffins and I love prepping the day before, I set my coffee at night so it is brewed when I wake up. Great idea!

      I want to send in my recipe for sweet tea. It’s really easy to make and fast. I buy my tea bags in gallon size.
      In a coffee maker , place the tea bag in the coffee holder. Put water in the carafe and run it thru two times. Our it into a pitcher and add sugar. I put 2 cups in mine. Add water to make a gallon.
      It’s very good. Everyone wants me to make tea for them. ( if you don’t have gallon size bags, you can use 4 of the big bags at the store.

    I really like this recipe and will be trying it soon. Blueberries are such a great source of antioxidants. And you can’t beat a homemade anything!

    This right here! Girl! My mom used to make banana bread muffins and we’d just eat those for breakfast. This is a great way to have breakfast quickly in the morning. Especially when you can have it for like 2-3 days and just add some more fruit or yogurt if they need something else. I have to let go of thinking that we need to eat an actual meal for breakfast. Lol
