What’s for dinner: Lamb and salad with apple vinaigrette dressing

I am so tired of chicken. I feel like all we eat are chicken and ground beef. It’s either fried chicken, baked chicken, chicken in the crockpot, etc. Or its spaghetti, or a meatball sandwich or tacos. I was in the farmers market the other day and I saw a guy get some lamb and I said you know what I think I want to try and cook it. Y’all I didn’t know what I was in for but I messed up the first set I got. So I searched on Pinterest for a good recipe and some of them called for things I didn’t have or were too complicated for me. Y’all know how Pinterest can be when it comes to recipes it is either a hit or miss. So I put my thinking cap on and decided to try again this time using what I already know about meat. Here is how to bake lamb for dinner tonight. I will also throw in a salad dressing to toss a good simple salad on the side. It’s what’s for dinner tonight!

How to bake lamb

When I told my daughter I was baking lamb for dinner she said the cute animals no mom you can’t cook that. I refuse to eat that cute cuddly animal. But you eat chicken…she said yes mom but they aren’t cute and cuddly. I refuse to eat the lamb and will be vegetarian tonight…ok then. Suit yourself.

I got my lamb from the farmers market. Funny that I can’t really find it in the local store near me. I decided to marinate it here is what I used

4 pieces of lamb

Olive oil about 1/4 cup

Lemon juice. You can use real lemon but I didn’t have any so I just used about a half cup of juice from the bottle.

I am not good with measurements so y’all bear with me. Also you can kind of cook this like pork chops…kinda.

Garlic. I used the ones out the jar and used about a tablespoon full

Salt

Black pepper

onion powder

smoked paprika

Worchester sauce

I am so sorry I have no measurements for you all but use your judgement for the above as if you are cooking other meats.

Mix together everything and pour it into a large freezer bag add in your chops let sit for about an hour.

Get you a good cast iron skillet and cook the lamb (after marinating it) for about 3 min on each side. Then put it in the oven you can use the cast iron skillet or put it on a pan and let it cook for about 10 min. Let it rest for about 2 min and serve with a salad.

Now the salad can be a bag one or you can make a salad from scratch. I prefer the making from scratch salad as the bags just don’t feel as fresh to me. Here is the apple cider vinaigrette dressing that almost tastes as good as Chick Fil A.

Apple cider vinaigrette dressing

¾ cup Extra Virgin Olive Oil
¼ cup Apple Cider Vinegar
2 tablespoons raw honey
1 tablespoon dijon mustard
½ teaspoon dried basil
1 clove garlic minced
Salt and Pepper to taste
