Is it officially summer yet? In my neck of the woods it is. School is out and summer time foods are in. I love making things that will cool me down in the hot summer heat. Cooking hot food on hot days…aren’t my thing. I love Watermelon…..it’s one of my favorite summer fruits and it’s a fruit that my kids eat. If you know my kids then you know they are a picky bunch so this salsa is actually a win win for them.

Watermelon Peach Salsa

Ingredients:

  • 1 Peach Chopped
  • 2 Cups Chopped Watermelon
  • 1 Teaspoon Cilantro
  • 1 Bell Pepper Chopped
  • 5 Celery Stalks Chopped
  • Lemon Juice

Watermelon Peach Salsa

Directions:

  1. Place chopped celery and bell pepper in food processor. Lightly chop.
  2. Place in bowl with watermelon, peaches, and cilantro.
  3. Either use the juice from one lemon or sprinkle about 1 Tablespoon of lemon juice over the mixture.
  4. Mix well and enjoy!

Note: If you like a spicier/sweet salsa, add in jalapenos instead of bell peppers.
