Is it officially summer yet? In my neck of the woods it is. School is out and summer time foods are in. I love making things that will cool me down in the hot summer heat. Cooking hot food on hot days…aren’t my thing. I love Watermelon…..it’s one of my favorite summer fruits and it’s a fruit that my kids eat. If you know my kids then you know they are a picky bunch so this salsa is actually a win win for them.
- 1 Peach Chopped
- 2 Cups Chopped Watermelon
- 1 Teaspoon Cilantro
- 1 Bell Pepper Chopped
- 5 Celery Stalks Chopped
- Lemon Juice
- Place chopped celery and bell pepper in food processor. Lightly chop.
- Place in bowl with watermelon, peaches, and cilantro.
- Either use the juice from one lemon or sprinkle about 1 Tablespoon of lemon juice over the mixture.
- Mix well and enjoy!
Note: If you like a spicier/sweet salsa, add in jalapenos instead of bell peppers.
