So you know that shredding chicken for tacos or other various meals can be burdensome right? Well there is an easier way to do it. There’s no need to risk scorched fingers by shredding hot chicken with forks. The secret is using the paddle attachment on your standing mixer and “mixing” cooked, warm chicken breasts for a few minutes.
The Mason Jar Blender Trick
Did you know that a Mason jar can be used instead of the pitcher in most blenders? I found this trick and picture on Real Simple Magazine Many detachable blade assemblies screw right onto a mayo jar or a small-mouth Mason jar. Don’t fill it by more than half, though, and as with any regular blender, avoid very hot liquids.
Great Taco Shells
I am a sucker for some great tacos and sometimes when I buy from the store their stale…and I am mad as hell.
Working with 6 tortillas at a time, wrap in a barely damp cloth or paper towel and microwave on High until steamed, about 30 seconds. Lay the tortillas on a clean work surface and coat both sides with cooking spray. Then carefully drape each tortilla over two bars of the oven rack. Bake at 375°F until crispy, 7 to 10 minutes. Info and picture can be found here
Grilling fish on top of lemons
So it’s grilling time and we don’t want ribs all the time do we. Why not grill some fish. Easy way to do it…..put it on top of lemons. Fish cooks on top of lemons beautifully, soaking up lemon flavors, and comes off in one piece. Try it this summer.
Cinnamon Roll Waffles with Cream Cheese Glaze
I did these about two years ago and OMG. Recipe is here
