Taking Hashbrown and Eggs to a new level

November 11, 2016

Do you love eggs? How about hashbrown? I know you love bacon so why not combine all of them into one. I know sounds crazy but keep listening. Gather all of your ingredients

Bag of hashbrown or 15 oz ( I used Alexi because it was on sale but get one that you like make sure it’s the frozen kind)

1 Cup of Cheddar Cheese

Olive oil (1 Tablespoon)

Eggs (8 eggs or more depending on how many muffin cups you fill)

Bag of bacon bit

  • Mix hash browns, salt, pepper, olive oil and 1 cup Cheddar cheese in a mixing bowl
  • Grease the muffin pan and divide hash brown mixture. Use your fingers to pack them tightly and shape them into nests
  • Turn oven on and bake at about 400 degrees until the hashbrown has browned and cheese has melted

Take it out and then top with eggs, a sprinkle of cheese, salt/pepper, parsley, and bacon bits

  • Bake at 350 degrees until the egg whites set, about 13 to 16 minutes
  • Let it cool, gently slide a knife along the edges and use a fork to lift it out of the pan

My kids loved it and it was a huge hit. If you try it make sure you tag us and use #itsreallykita
