Sweet Potato Pancakes

It’s that time of the year where we get rid of all the pumpkins and bring on the sweet potatoes. Of course we all love the pie (apple is more of a favorite with me) and the soufflé (which I did a few months ago) but let’s do something different for breakfast this weekend and bring on the pancakes! This is a simple and easy way to make your favorite this weekend. What’s your favorite pancake? What else can you make with sweet potatoes?

Ingredients:

  • 2 Small Sweet Potatoes
  • 2 Eggs
  • 1 Tablespoon Cinnamon
  • Olive Oil

Directions:

  1. Peel and slice your sweet potatoes then cute them into small chunks.
  2. Place them in a pot of water and allow to boil until soft.
  3. Place potatoes in a food processor and blend until smooth.
  4. In a bowl, combine ¾ Cup of your sweet potatoes, the eggs, and cinnamon. Mix well.
  5. In a hot pan, place a bit of olive oil (butter makes them fall apart) and place about three spoonfuls of the batter. Be sure to flatten it a bit if it’s too thick. Make it even.
  6. Allow to cook until the one side is finished then flip and allow to cook on the opposite side. Each side should take about 2-4 minutes.

    These look fabulous. I am a huge fan of sweet potatoes! I’ve never tried them in a pancake form, so now I’m intrigued!

    Will have to remember to make extra sweet potato so we can make some pancakes out of them. Something new and different to try out.

    This is one of my faves. Low cal, easy to make and delicious. I don’t boil the potatoes though, I microwave them.

    I love sweet potatoes so SO much! I sometimes use them in place for recipes that call for pumpkin. I really think that I’d love the sweet potato pancakes.

    I am alll about sweet potatoes for sure right now! Come 11/1 it’s compost the pumpkins and bring out the sweet potatoes! These pancakes look delish!

    I love my sweet potatoes and often have them as fries or mash but never tried having as pancakes, these do look real delicious though

    Confession- I’m not a big fan of sweet potatoes but these sweet potato pancakes sound AMAZING!! I need to try these for myself!

    As much as I love sweet potatoes, you’d think I would have already thought about making a pancake recipe with them. Lucky for me, I don’t have to now because yours sounds scrumptious.

    Its a very creative dish, I would have never thought of using sweet potato in pancakes. Love it..!!. I would definitely try it at my upcoming birthday party. Could you help me list down some more amazing recipes using sweet potatoes. Thank you..!!

    A fews ago Cracker Barrel had these on the menu. It was a seasonal item and I haven’t seen them since or either I wasn’t in there at the right time. They were SO good and I’ve never forgotten them. I just want to buy mine already ready.

      I think they sell the mix in the stores. Last time I went I saw it up there. They do need to bring it back
