Potato and Corn Chowder Soup

December 2, 2016

I am a huge fan of soup and I am also a huge fan of my crockpot. Today we are making some Potato and Corn Chowder. It’s easy to make and tastes so good. Try it with some King Hawaiian Bread.

24 ounces red potato, diced

1 (16-ounce) package frozen corn

3 tablespoons all-purpose flour

6 cups chicken stock

1 teaspoon dried thyme

1 teaspoon dried oregano

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Kosher salt and freshly ground black pepper, to taste

2 tablespoons unsalted butter

1/4 cup heavy cream

*Note: I didn’t have Kosher Salt so I used my reg salt, I also didn’t buy Thyme couldn’t find it at my local Publix so I went without.

Place potatoes and corn into a slow cooker. Stir in flour and gently toss to combine. Stir in chicken stock, thyme, oregano, garlic powder, onion powder, salt and pepper, to taste.

Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours.

* Stir in butter and heavy cream.

corn and potatoe

I added a little bacon on top for my purposes but you don’t have to!

I, too, love soups cooked in the slow cooker, especially on a cold, winter day. Potato soup is a favorite of mine, so I’m looking forward to trying your potato and corn chowder. It looks delicious.
