Peanut Butter and Pistachio Sugar Cookies

It’s time for something green! Just in time for St. Patrick’s Day. What’s your favorite green item to eat? Don’t say green eggs and ham because that looks right nasty lol. I prefer something simple like this peanut butter sugar cookie! If you try it let me know!

Ingredients:

  • 1 Package Sugar Cookie Mix
  • 2 Teaspoons Cinnamon
  • 15 Drops Green Food Coloring
  • Creamy Peanut Butter
  • Pistachios

Directions:

  1. Prepare your sugar cookie mix as directed on the box.
  2. Add your cinnamon and the food coloring to your mix and stir well.
  3. Grease a large muffin pan and put about 1-inch balls of mixture in the middle of each muffin area.
  4. Using your thumb or a spoon, flatten the middle of them so it looks like a large thumbprint.
  5. Spoon about half a teaspoon of peanut butter into the middle of each cookie.
  6. Crack open your pistachios and place one in the middle of the peanut butter on each cookie.
  7. Bake at 350 degrees for about 6-8 minutes.

    Those look so good! Pistachio is one of my favorite nuts, and you can’t go wrong when you add peanut butter to anything.

    This cookies look so yummy and are perfect for St. Patrick’s Day. I never thought about making cookies with pistachios.

    What a fun mix, I honestly never thought to mix peanut butter and pistachio for sugar cookies before but oh what a lovely color it makes. Perfect for Spring and St Patrick’s Day cookies!

    Although I am not a fan of pistachios, I love this creation. Its a pretty color green and very festive!
