Leftover Turkey Corn Chowder

After Turkey Day next week, you will need to do something with all the Turkey meat that you will have left over (unless you have a huge family). I am here to save the day! Here is a great chowder you can use to make use of all the meat and it’s also a great way to change up your regular Thanksgiving meal if you want something different.

Ingredients:

3 Cups Leftover Cooked Turkey

1 Onion

4 Yellow Onions

1 Can Sweet Corn

1 Can Cream of Corn

1 Can Sliced Carrots

1 ½ Cups Milk

1 ½ Cups Chicken Stock

2 Tablespoons Butter

1 Tablespoon Salt

1 Tablespoon Pepper

2 Teaspoons Thyme

Directions:

  1. Begin by dicing your onion and potatoes.
  2. In a large soup pot, place your butter and diced onion. All to cook until onion is translucent.
  3. At this point, add everything else to the pot except your can of carrots. Bring to a boil then reduce and let simmer until potatoes are soft.
  4. Add your carrots and allow to simmer for a few more minutes.
  5. Remove from heat and allow to sit for a few minutes before serving.

    Corn Chowder is comfort food to the max and it’s one of my favorite chowders during the holidays. I need to make some this weekend using your recipe. It looks scrumptious!

    I’ve never repurposed my holiday leftovers…we literally eat holiday dinner for three solid days. Haha. We are sick of turkey by the third day. I should really change that this year, and make something tasty like this!

    Always on the hunt for recipes for all those Thanksgiving leftovers. Requirements are simple 1) must include turkey and 2) must be EASY! This corn chowder sounds like a winner to me. Thanks Kita.

    I make a Thanksgiving Leftover Chowder that’s very similar. It’s a big hit and a great way to use up leftovers.

      That’s a great question. I have substituted with almond milk so I am sure coconut will work! If you try it please let me know

    I love a good corn chowder so always looking for great recipes. We can get tired of turkey sandwiches. I did a turkey bacon alfredo dish with my leftovers.

    Corn chowder is a good food and so convenient. Blending leftover turkey with it looks like a nice combination indeed. It is always an issue managing the leftover after the end of celebrations.

    I love all soups and chowders any time of the year but especially this time of the year!! I will have to try this with the leftover turkey from Thanksgiving, if there is any! LOL!

    Great! Another new recipe to “recycle” left over turkey! I am saving this recipe for later. I usually get a smaller size turkey so there will be little left overs, but I won’t mind if there is because that would be reason enough for me to make this soup!
