Leftover Chicken Meatballs

You don’t have to eat meatballs just with spaghetti. You can have it for a sub or by itself. I am a huge fan of the one you cook in the crockpot with jelly those are my favs and great for a party. Today we are taking it a step further with some leftover chicken. If you have leftovers and don’t want the same thing twice you can always take the meat and do something different with it the next day. Here is a great way to take leftover chicken and make it into something new.


  • 1 Pound Leftover Chicken
  • 4-5 Strawberries
  • 1 Cup Chopped Asparagus
  • ¾ Cup Bread Crumbs
  • 3 Ounces Grated Parmesan Cheese
  • 1 Egg
  • Olive Oil
  • Salt and Pepper


  1. Place your chicken, asparagus, and strawberries in a food processor and blend until no large chunks are present.
  2. Place chicken mixture in a bowl and add your bread crumbs, egg, cheese, and salt and pepper. Mix well.
  3. Place your olive oil in a frying pan and let heat up on medium heat.
  4. Using your hands, form the chicken mixture into about 1-inch balls. Place in pan. Don’t crowd your pan.
  5. Constantly be rolling the balls because they will cook fast.
  6. Once even on all sides and cooked through, remove from pan and place on a napkin so the excess grease is caught.

Note: The great thing about these meatballs is the fact that you don’t have to use asparagus and strawberries if you don’t have them. Any other veggie you have on hand will work fine. This is your chance to use up leftovers!

    Not sure about adding the strawberries. We love strawberries but seems like a waste in meatballs. I agree there is more than one way to eat meatballs and we love them anyway we can get them.

    When I saw your Instagram post I thought it might have been meatballs but wasn’t sure. I’ve made a homemade compote before to candy meatballs using different fruits, but I never actually considered just grinding them in with the meat. Will have to give this a try.

    The recipe is wonderful. I never waste food and I eat the left overs as it is if I can’t make something good out of them. These meatballs look wonderful and will definitely try this.

    You don’t even need leftover chicken for this recipe. I would buy ground chicken separately just to make them!

    I don’t think I have ever had meatballs with fruit in them before. Maybe pineapple, but I don’t think so. What a fun twist on meatballs.

    Wow, I have never heard of a chicken meatball before now. This is simple to do and I would add the strawberries to my side plate instead of the processor.

    Hmmm not sure about adding strawberries, but I could see adding carrots! But it may be one of those “don’t knock it ’til you try it” things 🙂

    I love meatballs! Though they often are in fat and sodium, meatballs also provide minerals, vitamins and proteins.
