It’s a Sweet Potato type of day

Who doesn’t love sweet potatoes? If you don’t then you must exit this page immediately. I love sweet potato but I have a confession to make….I don’t like the pie. I love to make sweet potato souffle more than the pie. I have a quick recipe for you to make your own and when I say your own….this recipe is for one person. I promise you don’t have to share it. I just did a pancake recipe with sweet potatoes too if you want to check that out for a new take on breakfast.

Ingredients

  • 1 large or 2 small cooked sweet potatoes
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • ¼ teaspoon ground ginger
  • 1/2 teaspoon of granulated sugar
  • 1 egg, lightly beaten
  • ¼ cup pecans

Take one or two (depending on the size I used two) potatoes and bake them until soft. Mash it up until you get about two cups of potatoes.

Mix all of your ingredients above with your mashed potatoes (add egg in last) Pour into a small dish

I use a small glass dish that I have just for me but you can use a ramekin dish Whatever you use grease it or spray it down with pam

Put your pecans on top and bake for about 20 minutes on 350 degrees

You can add marshmallows if you want I hate it but some people love it.

Don’t add this until you have baked the above. Add your marshmallows and then put back in the oven for 10 minutes or until marshmallows are brown.

I am not sharing my dish with anyone but I can share with you some other sweet potato recipes that you have to make this holiday season

    There are no sweet potatoes eaten in our house, but I know my Nana loves them. People either love them or hate them 🙂

    I don’t like marshmallows anywhere near my sweet potatoes! I always make our favorite sweet potato casserole for Thanksgiving. It’s my favorite side dish. Now I’m craving sweet potatoes.

    Yum, I just love sweet potatoes. I tend to make mine unhealthy with cinnamon butter and marshmallows though. But I’m still eating a sweet potato at least 😉

    I am in love with sweet potatoes hahaha they’re a bit tricky to find here in Indonesia tho. I will have to check out all of your recipes here and pin them to try the next time I could find sweet potato.

    We grow sweet potatoes and they store really well in a cool dark place. Can’t have the holidays without fixing couple different sweet potato dishes.

    I LOVE YOUR STYLE! Make it for YOURSELF! I often get in trouble at home for making single servings of things. The side-eyes that I get from my husband and children are HILARIOUS! But that’s okay. I’mma keep doing me. This looks delicious. My dad isn’t a custard pie eater, but we’ll see if he’ll try this for Thanksgiving.

    I love sweet potatoes! My very quick way to eat it is just to boil it and when eating, I just dip it over the brown sugar. Sometimes eating it all alone especially when I want to take a diet.

    I don’t make sweet potatoes as I don’t really care much for them. Hubby on the other hand loves them, he would really enjoy this recipe.

    You don’t like the pie?!? Blasphemy I tell you! That’s just because you never had one of my mom’s sweet potato pies!! Personally, I like them roasted to the point where the skin just falls off and I enjoy them just as is in their natural state.
