Grilled Chicken and Spinach Salad with Strawberry Vinaigrette

Who doesn’t love a good ole fashion salad. I have been eating a lot of it lately….practically all summer long. What makes a good salad though is not what you put in it but what you put on top. I love my dressings and I think that making your own is the way to go especially if you are trying to eat healthy. Now I buy store brands but these days I try to make sure I am buying ones that don’t have a lot of fat in them or the ones that are a bit lighter. I am a huge fan of Thousand Island but it’s not a huge fan of me and my weight. I have been wanting to try some of the different Vinaigrettes out there to see which ones I will like the best. I love the apple one from chick fil A as I use that one with my salads all the time. Until Chick Fil A comes out with their own bottle I say we try our own……….

Ingredients:

  • Spinach
  • 6 Ounces of Chicken
  • 1 ½ Cups Strawberry Preserves
  • ½ Teaspoon Salt
  • ½ Teaspoon Pepper
  • ½ Cup Olive Oil
  • ½ Cup Vinegar

Grilled Chicken and Spinach Salad with Strawberry Vinaigrette

Directions:

  1. Fill bowl with spinach.
  2. Grill chicken as desired and chop into chunks.
  3. Place on top of spinach.
  4. To make vinaigrette, combine preserves, salt, pepper, oil, and vinegar in a blender and mix well.
  5. Pour over salad and enjoy!

    Sometimes I just have a simple salad as a filler so that I can have one turkey sausage link on a hotdog bun with ketchup and mustard and be satisfied. On days like that I choose a lite dressing over salad greens, shredded carrots, grape tomatoes and cucumbers.
