Who doesn’t love a good ole fashion salad. I have been eating a lot of it lately….practically all summer long. What makes a good salad though is not what you put in it but what you put on top. I love my dressings and I think that making your own is the way to go especially if you are trying to eat healthy. Now I buy store brands but these days I try to make sure I am buying ones that don’t have a lot of fat in them or the ones that are a bit lighter. I am a huge fan of Thousand Island but it’s not a huge fan of me and my weight. I have been wanting to try some of the different Vinaigrettes out there to see which ones I will like the best. I love the apple one from chick fil A as I use that one with my salads all the time. Until Chick Fil A comes out with their own bottle I say we try our own……….
Ingredients:
- Spinach
- 6 Ounces of Chicken
- 1 ½ Cups Strawberry Preserves
- ½ Teaspoon Salt
- ½ Teaspoon Pepper
- ½ Cup Olive Oil
- ½ Cup Vinegar
Directions:
- Fill bowl with spinach.
- Grill chicken as desired and chop into chunks.
- Place on top of spinach.
- To make vinaigrette, combine preserves, salt, pepper, oil, and vinegar in a blender and mix well.
- Pour over salad and enjoy!

September 13, 2016 at 3:20 pmSometimes I just have a simple salad as a filler so that I can have one turkey sausage link on a hotdog bun with ketchup and mustard and be satisfied. On days like that I choose a lite dressing over salad greens, shredded carrots, grape tomatoes and cucumbers.
