Coconut Pumpkin Soup

It’s almost fall……so I thought we would end the summer with pumpkin….cause you know there will be pumpkin everything in the next few weeks. I like to kick things off right *evil laugh*. I love me a good soup…….something simple and warming for my tummy is all I ask for.

Coconut Pumpkin soup

Ingredients:

  • 1 Can Pumpkin Puree (about 14 oz.)
  • 1 Can Coconut Milk (about 14 oz.)
  • 1 tsp Garlic Powder
  • 2 tsp Lemon Juice
  • 1 tbsp Cilantro Flakes
  • 1 tsp Salt

Directions:

  1. Open can of coconut milk and stir thoroughly.
  2. Combine all ingredients in sauce pan.
  3. Continuously stir until mixture is creamy and well-heated.

    This sounds really similR to a soup we had at the Biltmore Estate in Asheville, North Carolina. It was a really good soup.

    This looks and sounds so good. I’ve never had anything like ti before, as i’m not a huge coconut fan but can you believe I’ve never in my life tried pumpkin? I need to give this a try!

    The coconut will make this soup extra creamy! It’s also a nice alternative to milk, especially if you want to lessen the calories a bit. I love pumpkin soup, it’s so comforting especially during the colder nights of the year!

    I haven’t tried something like that. We are not used to soup in our home, the only soup we make is a chicken and macaroni soup.

    This sounds like a combination that I just have to try. I love pumpkin soup and so to add coconut sounds really good.
