Brunching around Atlanta

I love Brunch…why? Because I am not a morning person. My day doesn’t really start until around noonish most weekends. So most weekends (especially Sundays) we have Brunch because I don’t roll over until about 10:30 am on Sundays. To all you church folks I’m sorry…I do catch bedside baptist most days though so I am not a total sinner. Sometimes I make brunch at home and sometimes I decide to go brunching around Atlanta.

Brunch to me consists of breakfast food and lunch food meshed together. So the perfect example would be chicken and waffles. Which I have a recipe for….well the recipe is for the syrup. I will tell you how I make the chicken and the waffles.

Waffles – I have a waffle maker so I make them from the box (Aunt Jemima is the best get the complete buttermilk) or you can make them from scratch

  • 2 cups all-purpose white OR whole wheat flour
  • 1 3/4 cups milk
  • 2 eggs
  • 1 stick of melted butter
  • 1 tablespoon white sugar
  • 4 teaspoons baking powder
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
Instructions
  1. Preheat your waffle iron and spray with cooking spray or rub a little melted butter on.
  2. Whisk together the dry ingredients – flour, sugar, baking powder and salt.
  3. In another bowl, beat the eggs with a mixer until light and fluffy and pale in color.
  4. Add the vanilla to the egg mixture.
  5. Mix the dry ingredients into the egg mixture a little at a time.
  6. Add the butter and milk into the mixture- blending until just smooth.
  7. Let mixture sit for about 5 minutes before adding to the waffle iron.
  8. Pour onto hot iron and cook until golden brown.

For the chicken, I use the chicken strips from the store and fry them up. I let them soak overnight in an egg mixture with milk. So season your chicken however you want then soak them. Use 2 eggs and one cup of whole milk. Fry them when you are ready to fix your brunch.

Now on to the syrup. It’s a buttermilk syrup that you can use to pour over your chicken and waffles

1/2 cup butter

1 cup sugar

2 teaspoons vanilla

1 teaspoon cinnamon

2 tablespoons Karo syrup

1 cup buttermilk

1/2 teaspoon baking soda

Heat stove top to medium-high heat. Use a large pot so the liquid doesn’t boil over. Place the butter, sugar, vanilla, cinnamon, Karo syrup, and buttermilk in the pot. Mix until all the ingredients are fully combined and the mixture begins to bubble. Let the mixture bubble for about 45 seconds, stirring constantly. Remove the pot from heat and add the baking soda. Mix until well combined. Place the pot back on the heat, and let the syrup bubble for another 45 seconds, stirring constantly. Take off of heat, continue to stir until it cools down a little and the bubbles disappear.

    I’m such a morning person, even on the weekends I’m up by 5 or 5:30. But, I do enjoy brunch so lots of times I skip breakfast so that I can have brunch.

    Brunch is the best, isn’t it? I would rather go out for brunch than any other meal. I would love to brunch in Atlanta someday!

    I am such a morning person, This look super tasty!!! I totally neeed this in my life… I will have to try making this!! I only really do brunch on the weekends. I get way to early during the week.

    Oh! I’ve always wanted to have chicken and waffles. They had a restaurant that specialized in this cuisine where I used to live but I never got to experience.

    I LOVE brunch and it’s awesome to be able to prepare brunch at home with a recipe like this! Chicken and waffles is a classic favorite and it’s always a hit with, well, everyone! Love the recipe for the syrup as well, thanks!

    I think brunch is perfect, it’s filled with all the good food that I enjoy during breakfast and lunch! I think chicken and waffles is a good recipe for brunch, yours looks SO good and thanks for the restaurant recommendations as well. I’d like to try your recipe for the buttermilk syrup, I bet it’s amazing!

    Brunching around Atlanta sounds great but, I am such a morning gal. No matter how I try to sleep in I can’t. Waffles and Chicken sounds pretty good, I must give that a try this weekend. !

    This is one of my husbands favorite meals! He gets it whenever a resturant serves it. I dont fry food or else I would make this for him.

    I never had chicken and waffles until I moved to Mississippi and become hooked. A lot of places in Atlanta do really well.
    Next time you’re in Decatur/East Lake go to My East Lake Coffee Shop on Memorial Drive. Just typing the name makes me think about how light and airy their waffles are.

    I agree on you, I am not a morning person so normally I always eat brunch. Never been to Atlanta yet and I guess this will be a great idea. Will definitely take note of this.

    Weekdays start with an early and hearty breakfast for us. But yes weekends are a bit more relaxed with us getting up late. That is when we have our brunches, whiich are quite heavy. Waffles are a favourite in this meal.

    Yassss I’m all for chicken and waffles!! Here in MN we have maybe 1 or 2 places to get it so makingbit myself is a definite must! It looks sooooooo good I have to try your recipe!

    I don’t get to brunch nearly as much as I would like. I love a good chicken and waffle. Like you, I use mix and the waffle maker. I need to try this recipe.

    I chicken and I like waffles just not together LOL! My husband always looks at me like I’m crazy when I say that! I came to Atlanta about 9 years ago and went to Copeland’s for brunch and it was amazing.

    I’ll be back in Atlanta for a conference in the Fall, and can’t wait to explore all the good eats! Now that the kids are out for summer, I can finally make waffles from scratch, etc. without all the added time constraints! 🙂

If you are having a bridal shower, baby shower, business meeting, etc. you can have your event upstairs. Make sure you get the shrimp and grits.
