Breakfast Avocados

With school back in session….I need something quick and easy for my morning breakfast. I love Avocados and with me trying to be somewhat healthy this works. What are some quick morning breakfasts you use to get you started in the mornings?

Ingredients:

  • 1 Avocado
  • 2 Medium Eggs
  • 2 Tablespoons Olive Oil
  • Salt and Pepper

Directions:

  1. Slice your avocado in half long ways. Carefully remove the pit.
  2. Using a knife, slice lines into your avocado but be careful to not slice all the way through it.
  3. Sprinkle a tablespoon of olive oil on each avocado and then sprinkle with salt and pepper.
  4. Carefully open one egg at a time and let it slide into the cavity of the avocado. Do the same with the other egg and other half of avocado. Some of the white of the eggs may spill over, this is ok.
  5. Place your avocados on a large muffin pan so they are held upright and place in the oven at 350 degrees for about 15-20 minutes, this will depend on whether or not you like them over easy or over hard. I liked them over hard so keep that in mind with the time.

    Never thought to actually make the egg inside of the avocado. Really great idea and quick and easy.

    I LOVE avocados, but my kids don’t at all. I am pretty sure they’ve never given them a chance lol. I think I’d love this.

    I love avocado toast for breakfast! My husband would love your recipe because he really likes having his eggs for breakfast. I love how you bake the eggs in the avocados.

    I’ve never thought to do this. I’m also trying to be healthier so I’m going to have to put this recipe in my breakfast rotation. Thanks for sharing. I can’t wait to see more.

    What an interesting idea I have to admit I’ve not played around with using avocados much in the past but I know they are so good for you so I should really try and include them in my diet more.

    I have never really done anything much to an avocado, unless you count making gauc from it! Ha. But, this is a great idea for those that love eggs and avocado!

    This seems like such a delicious way to start the day! My son eats avocado toast for breakfast on an almost daily basis, but I love the extra protein that the egg provides. We will be trying this for sure!

    I’ve actually never eaten avocado for breakfast, but this seems simple enough that I might try it now! Running out to get some now so I can try in the morning!

    I have never thought of cooking eggs in an avocado. I like eggs with avocado on top so I would like this.

    I love the idea of avocado eggs. My husband would think these were awesome. My kids would like them too unfortunately I am allergic to avocado. No seriously that’s the thing. It makes me sad because I always liked them before but they now make my throat itchy and my stomach hurt. I am totally making this for the rest of the family though.

    I so wish I could still eat avocados, recently I’ve started to have bad reactions to them. But this looks sooo good, and breakfast is my favorite meal!

    I need my egg cooked a bit more but other than that this looks delicious. I love avocados but I’ve never had them for breakfast.

    I have an unhealthy yet delicious cinnamon muffin for breakfast.
