Blueberry Pie Pancake Muffins

Breakfast around my house can be tiresome. I go to bed late at night working so mornings are bah humbug around my house. I need something quick and easy to make in the mornings because I am halfway asleep. Who has time for big breakfasts in the weekday when you have to get kids up and out in time for school. Blueberries are our favorite around here and there are so many ways you can remix blueberries for a quick and easy breakfast. Below is one of our favorites. Quick, easy, and so delicious…you may want to make it at least 3 times a week!

Blueberry Pie Pancake Muffins


  • Fresh Blueberries
  • Pancake Mix
  • Cinnamon
  • Sugar

Blueberry Pie Pancake Muffins


  1. Make pancake batter as directed on box.
  2. Place batter in a muffin pan filling each space ¾ of the way full. Don’t forget to grease your pan!
  3. Place 3-5 blueberries on the top of each muffin and press them down a bit so they rest into the batter.
  4. Place in oven for about ten minutes at 350 degrees.
  5. Once out of the oven, immediately sprinkle cinnamon and sugar over the top of the muffins.
  6. Enjoy!

    I love making lemon blueberry scones so I know I’ll enjoy making these blueberry pancake muffins. What’s better than pancakes and muffins are in one? Yum!

    I like that it comes in small cupcake sizes which makes it a good snack and dessert. This looks really tasty.

    I make pancakes in our muffin tin often. But I never thought of adding fruit. This looks really good.

    These blueberry pie pancake muffins are a great idea. My family would love these for a quick breakfast. I will have to try doing this but adding a little bacon to them. Thanks for sharing the idea.

    i tried to make cupcake once ,the recipe don’t say add flour so i didn’t add it,needless to say what happen, ok you want to know i burn my pan! thinking it need to cook a little longer

    Oh yummers, I like the sound and look of these. Generally I eat muffins every morning for breakfast. This would be a good sub.
