I get up late on Sunday’s because it’s really the only day I have to myself where I can sleep in late. The kids usually don’t bother me if they get up earlier so I know that I can sleep until at least 11. I am not a morning person so I live for Sundays. Last Sunday my kids wanted to go out to brunch and since I don’t crank my car on Sundays I decided to bring the brunch to them. I wasn’t able to go to the store to get challah bread which is what I normally use for baked french toast so I had to find a substitute…..I looked in the fridge and saw the bagels and I thought to myself…can I? Let’s try it out and see if it will work for french toast…..here is what you will need to have a great bagel and brunch event.

Bagel and Brunch

6 Bagels
A container of strawberries
8 large eggs
1¾ cups milk
¼ cup syrup
¼ cup of sugar
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon

Tear apart your bagels and then cut up a few strawberries in it. I didn’t do a whole lot because my kids thought it was eewww to have cooked strawberries. Mix together the milk, syrup, eggs, sugar, vanilla extract and cinnamon in a large bowl and then pour over the bagels and strawberries.

Let it bake for about 45 min to an hour (depending on your oven) on 350 I didn’t cover mine but if you want you can cover it up

I poured regular syrup over mine and sprinkled with some white powdered sugar!

And that was Brunch on last Sunday! What do you fix for brunch around your home?

*note you can use any bread you want to do the above I just used what I had!

    My son loves French toast so that bagel creation was something he would really like. It is great that they get the protein from the eggs and antioxidants from the strawberries.

    This would be a great brunch to serve my boys this weekend. I am sure they will be surprised to have a nice twist to the basic French toast recipe!
