I am all about trying new things for breakfast (or dinner). I was tired of apple pie so I wanted to do something different with my apples……let me know if you try this!
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons ground cinnamon
- 3/4 cup buttermilk
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups chopped apples, peels removed
- Vegetable or canola oil, for frying
- 1 1/2 cups powdered sugar
- 1/4 cup whole milk
- 2 teaspoons vanilla extract
Combine the flour, sugar, baking powder, baking soda, cinnamon and salt. In a separate bowl whisk together the buttermilk, butter, eggs and vanilla. Add liquids to the flour mixture and mix until just combined. Add the chopped apples and mix only until incorporated. Get your waffle maker hot and ready (I sprayed mine with pam) and pour in. Be careful how much you pour in because it will be all over the place I suggest maybe a half cup to a cup for each round of waffles you make. While you are cooking the waffles go ahead and get your grease nice and hot so you can fry them.
To make the glaze, whisk together the powdered sugar, milk and vanilla extract. Dip the hot doughnuts into the glaze and let sit for about 15 minutes before serving.
These were beyond good. I didn’t even have any leftover. If you try them make sure you let us know.
