I love love love sweet potato soufflé. It’s the bomb.com and it’s my favorite healthy non healthy dessert. I normally buy them from a place here in GA but I haven’t been in a while. I had some sweet potatoes sitting on my counter for a week and decided I needed to cook them up before they got bad. So I decided to make something sweet! If you love sweet potato then you will love this. I do not use marshmallows or pecans for mine but you can add it in on top if you want

sweet potato soufflé

3 medium sweet potatoes
1 large egg
¼ cup butter, melted
pinch of salt
¼ cup white sugar
⅓ cup brown sugar
½ teaspoon cinnamon
½ teaspoon vanilla
2 tablespoons milk or heavy cream

For the Top
¼ cup butter, cold and cut in cubes
½ cup flour
½ cup brown sugar
½ teaspoon cinnamon
 You can add in marshmallows or pecans here.

Preheat the oven to 400 degrees F. Lightly grease baking dish
In a large bowl, combine the sweet potatoes, sugar, eggs, milk, butter, vanilla, and salt. Pour the mixture into the prepared baking dish.

Topping: Combine the brown sugar, butter, flour, cinnamon, and pecans in a separate bowl. Crumble the topping over the sweet potato mixture.

Bake for 20 to 25 minutes, until the topping is golden brown. Serve hot.
